my son has been trying several afterschool clubs here in lexington and this week he joined the outdoors club. in order to raise funds, they’re having a bake sale. thomas asked me to make banana muffins…and i will. :)
i was too tired last night after a really horrible week previous so i decided to get up extra early and do it this morning. i found a recipe for AWESOME BANANA MUFFINS on the catcancook blog.
the recipe is super simple and with the exception of buying bananas, everything else i always have on hand. (well, almost always) the following is the recipe as i made it. it’s only a tiny bit different on catcancook.
Banana Muffins (makes a ton of mini muffins or 12 regular sized muffins)
3 or 4 Large bananas, mashed
3/4 cup white sugar
1 slightly beaten egg
1/3 cup melted margarine or butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour
Mix the mashed banana, sugar, egg and margarine together. Set aside.
In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together!
Pour into greased muffin tins & bake in 350 degree F ovenfor approximately 20 minutes.
